This tart is amazing. I was playing around with some leftover ingredients and came up with this decedent desert that is ever so creamy. The pears are poached with vanilla, cloves, nutmeg, allspice, star anise and cinnamon, infusing the pears with a warming spice that pairs perfectly with cozy winter nights in front of an open fire.

WINTER SPICED CARAMEL PEAR TART [VEGAN]
SERVES 8 PREP: 1 HOUR + 15 MINUTES COOK TIME: 25 MINUTES |
INGREDIENTS
- 1.5 cups rolled oats
- 2 Tbsp coconut sugar [brown sugar is ok also]
- 1/4 Cup coconut oil
- 4-6 Tbsp water
- 1 Tbsp lemon juice
- A pinch of salt
- 1.5 Cups Full Fat Coconut Milk
- 1/2 Cup shredded coconut
- 6 Tbsp brown sugar [3 tbsp for pie filling and 3 tbsp for pears]
- 3 Tbsp lemon juice
- 2 Tsp agar powder
- 1 Tsp tapioca start
- 1/2 Tsp salt
- 3 pears de-cored and cut into eighths
- 3-4 cinnamon sticks
- 1 tsp vanilla essence
- 1 tsp cloves
- 1 tsp nutmeg
- 1 tsp all spice
- 6 star anise
- 6-8 Medjol dates
- 4 Tbsp water
INSTRUCTIONS
- Blend the rolled oats in a food processor till it becomes a rough flour
- Add the sugar, coconut oil, lemon juice and salt. Blend and slowly add 1 Tbsp of water at a time until a dough forms
- Press dough into a greased spring-form pan
- Bake at 180c/350F for 20-25 minutes until crust is golden and crunchy
- Let cool down for about 1 hour before filling
- In a saucepan over low heat mix coconut milk, sugar, lemon juice, agar powder, tapioca starch and salt until they are completely dissolved
- Turn up the heat and bring to the boil, stir constantly for a minute or two. Then reduce heat and let simmer for about 2-3 minutes whilst still stirring.
- Add the shredded coconut and stir
- Pour filling into pie crust and refrigerate for an hour
Caramel sauce
Blend dates and water till forms a creamy liquid. Add more water if needed. Set aside and drizzle over cake once ready to serve
Poached pears
In a saucepan add the pears, sugar, all the spices and about 1/2 cup of water. Let the pears boil for about 5 minutes and then reduce the heat and cover with a lid. Let the pears simmer and poach until they are soft and the water is absorbed. Add water as needed. Top pie with pears just before serving
